Let’s dive into one of my favorite easy dinner recipes: One-Pot Pasta. This dish is perfect for busy weeknights when you want a comforting meal without the hassle.

Ingredients:

  • 12 oz spaghetti
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups vegetable broth
  • 1 onion, thinly sliced
  • 4 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp red pepper flakes
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Fresh basil and Parmesan cheese for garnish

Instructions:

  1. In a large pot, combine the spaghetti, diced tomatoes (with juice), vegetable broth, onion, garlic, oregano, basil, red pepper flakes, olive oil, salt, and pepper.
  2. Bring the mixture to a boil over high heat. Reduce the heat to medium-low and simmer, stirring occasionally, until the pasta is cooked and the liquid has reduced, about 10-12 minutes.
  3. Taste and adjust the seasoning as needed.
